Sensory Qualitative Research: Not Chocolatey Enough

Working with our sensory partner Sensory Solutions

The Problem This Case Study Solved

A global food manufacturer wanted to delve further into customer comments that one of their products was ‘not chocolately enough’.

They asked us: what does this mean? Did it mean that the chocolate flavour was too mild? Were colour cues signifying a weak chocolate flavour? Was there simply not enough chocolate?

This is Where Our Sensory Qualitative Research Experience Came In

I am arguably the most experienced sensory qualitative researcher in Australia. We have been conducting focus groups on topics like this for over 2 decades.

Solving problems like these requires:

  • Imagination to develp the questions and stimulus material that empowered participants to experess what they meant
  • Deep knowledge of how focus groups work
  • Food and sensory expertise

How We Did It

  • We ran 3 x 2hour focus groups with the target market.
  • We developed a huge range of visual stimulus material – including paint swatches – as well as a sophisticated blind taste testing procedure. We needed to give each person as much unbiased help as possible to help them articulate exactly what they wanted
  • The result: we were able to identify the exact chocolate flavour and how much they wanted to taste and its texture
